Julio Cesar Madrid, La Milan, Colombia (Nitro Fermentation)
Grown by Julio Cesar Madrid in Colombia's central Andes, this coffee is truly something special, and with tasting notes of sweet candy canes, how better to showcase this coffee than at Christmas time!
This spectacular coffee was grown on the farm, La Milán, nestled in the municipalities of Pereira and Santa Rosa de Cabal. The farm benefits from rich soils, fleeting sunlight, and dramatic day-to-night temperature shifts, creating the perfect conditions for producing coffee with extraordinary depth and complexity.
Here, the cherries undergo a meticulously controlled Nitro fermentation process, beginning with a 20-hour anaerobic fermentation to enhance the coffee's inherent sweetness. This is followed by a second 20-hour aerobic fermentation, adding a vibrant acidity and the perfect balance to the end cup.
Post-fermentation, the beans are carefully dried in the sun for up to 25 days - a patient process that preserves every single unique flavour profile in the coffee bean.
